Julia: Hot-Cocoa Cupcakes

Oh the weather outside is frightful. But the fire is so delightful… So have a
HOT-COCOA CUPCAKE
First I would suggest washing your hands and putting on a apron…  Then the ingredients
2 1/4 cups all-purpose flour
1 ⅔ cups sugar
¾ cup butter or stick margarine, softened
⅔ cup Swiss Miss hot cocoa mix (about 4 packets )
1 ¼ cups water
1 ¼ teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
¼ teaspoon baking powder
2 large eggs
instructions:
Preheat oven to 350 degrees. Beat all ingredients with electric mixer at low speed for 30 seconds, scraping bowl constantly. Beat on speed for 3 minutes, scraping bowl constantly. Pour into cupcake tin. Bake 25 to 28 minutes. let it cool. MAKES: 24

While the cupcakes are cooling hears some things to remember…
~TEASPOONS are different than TABLESPOONS
~you SHOULD SHARE with family and friends
~it IS OK if you taste-test
~it is ALWAYS OK to add extra chocolate :)
( not that I did any of these… ha… ha…)
Now it is time to make the whipped chocolate frosting. You will need:
1 pint/2 cups whipping cream
⅔ cup chocolate chips
½ cup powdered sugar
1 to2 tablespoons sugar
Heat the cream in a skillet to a simmer. Add chocolate chips and stir till melted. Refrigerate for 24 hours. Whip for whipped cream, slowly adding powdered sugar and granulated sugar until the frosting reaches a fluffy and spreadable texture. Spread on cupcakes and enjoy! :)
